Description
Eynar's past and childhood years were marked by coffee cultivation. His parents and grandparents taught him to produce coffee and instilled in him the passion for the product. Eynar has been working in his own coffee business for more than 20 years now and his expectations and goals have always been to improve the quality of the coffee he produces. Production of specialty coffee has been a huge change in Eynar's economic life; the quality of their coffee has improved and is reflected in the price that they receive for their product.
The cherry is rested for 12 hours, depulped and then undergoes a 36hr fermentation process in sealed bags. The drying process is done in parabolic covered patios; slowly and gradually over 20 days.
Notable mention that Eynar farmed the COE in 2021 so he knows his stuffs!

from 2 reviewsThe aroma opened with very prominent honey notes, which were quite inviting. As an espresso, the chocolate tones and sweetness came through pretty strongly, leaning more toward the sweet side than bitter, which is exactly what i wanted.
