This is the second harvest pass of William Ortiz’s Chiroso. His first harvest this year was quite literally one of the highest-scoring coffees we tasted from Colombia, and we are excited to share this new release. In the cup we find a softer yet complex tropical profile with melon and lime.
William Ortiz is a newer addition to our ongoing exploration of Huila, and this marks our second purchase from him. Producing an exceptional lot once is challenging, but doing so consecutively is even more so. He is currently growing Caturra, Pink Bourbon, and Chiroso—and this harvest, we purchased both his Pink Bourbon and Chiroso selections.
Chiroso is a new variety being grown primarily in the region of Antioquia, Colombia. The variety has been genetically identified as an Ethiopian Landrace, but unfortunately we cannot get any more specific than that at this time.
Processing: Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry overnight. De-pulped. Dry-fermented for 36 hours. Washed. Dried on raised beds until moisture content reaches 10.5%.

The aroma opened with very prominent honey notes, which were quite inviting. As an espresso, the chocolate tones and sweetness came through pretty strongly, leaning more toward the sweet side than bitter, which is exactly what i wanted.
