William Ortiz is a newer name in the buying team's exploration of Huila, Colombia — this is only the second lot purchased from his farm. This particular batch is his third and final harvest pass of the season, closing out a strong first year of buying his coffee. William currently grows Caturra, Pink Bourbon, and Chiroso on his land in Pitalito.
This lot is the Chiroso variety, a newer cultivar identified genetically as an Ethiopian Landrace and grown mostly around Antioquia and Urrao. Cherries are hand-picked, floated to remove defects, held overnight before de-pulping, dry-fermented for 36 hours, washed, and dried on raised beds to about 10.5% moisture. In the cup, expect a softer, complex tropical profile of melon and lime.

The aroma opened with very prominent honey notes, which were quite inviting. As an espresso, the chocolate tones and sweetness came through pretty strongly, leaning more toward the sweet side than bitter, which is exactly what i wanted.
