This is the final harvest pass of the season from Wilson Alba. His work with Pink Bourbon continues to inspire, and each opportunity to taste his coffee affirms just how special his approach is. In the cup we find berry compote, lemon zest, and hibiscus.
For over 15 years, Wilson Alba has lived and worked alongside his brother Jose on their farm, Sierra Morena. Spanning eight hectares (~20 acres), the farm includes two hectares planted with Pink Bourbon, with the remainder in Tabi. Sierra Morena consistently produces some of the finest Pink Bourbon we taste from southern Huila.
Harvest: February 2026 | Processing: Hand-picked at peak ripeness. Floated. De-pulped. Dry-fermented for 24 hours. Dried on raised beds for 30 days until moisture content reaches 10.3%.

The aroma opened with very prominent honey notes, which were quite inviting. As an espresso, the chocolate tones and sweetness came through pretty strongly, leaning more toward the sweet side than bitter, which is exactly what i wanted.
